As with traditional gelling sugar, you can choose between the 3:1 and the 2:1 version, i.e. 3 or 2 parts fruit to one part gelling Xucker, with 2:1 gelling Xucker best suited to sour fruits like sour cherries, currants or gooseberries and 3:1 gelling Xucker best for everything else. For jellies you can use slightly less gelling aid – check the pack for details – apart from that it’s just how grandma did it.
Spices like cloves or cinnamon can give marmalades and jams a spicy kick. Our tip? Add a little freshly ground pepper to the recipe – the subtle spiciness really brings out the fruit flavour, especially with sweet fruit.
